2 Ingredient Sweet Potato Tater Tots

Yes to prepped organic veggies ready for you in the freezer. Yes to side dishes and main courses that make both parents and the kids happy at dinner time. Check out this simple and versatile recipe below and you’ll be saying yes too!

Ingredients:

Simple Starters Sweet Potato packet from our Root Veggie Pack: 1 (4 oz. pack)

Rolled Oats: 2 Tablespoons

Olive Oil Spray

Instructions:

Fill a 2 quart pot with water 2 inches from the bottom. Once the water boils, place steamer basket inside the pot and fill with Simple Starters Sweet Potato packet (from Root Veggie bag). Steam for 10 minutes. Place the oats in the food processor and pulse several times until oat flour forms. Add the steamed and cooled sweet potato and blend until smooth. *Add flavor variation of choice, or not! Preheat oven to 425 degrees F. Using a tablespoon measure scoop out about ½ tablespoon of mixture and form into tater tot. Repeat with the rest of the mixture, you should have 9 equal-sized tater tots. Place the tater tots on a parchment-lined (or silicone mat lined) baking sheet. Spray with olive oil spray and bake in preheated oven for about 12 minutes, or until the tops are lightly golden. (Allow to cool completely before serving).    

*This recipe is a great base for super simple sweet potato tater tots you can make for your kiddos. They are also endlessly versatile. You can add a sprinkle of cinnamon or cardamom for a sweet version or a tablespoon or two of grated parmesan (or oregano)  for a more savory option.
