Spiced Sweet Potato Oats

Nothing is better than a warm bowl of oatmeal on a cold winter’s day, and our recipe for Spiced Sweet Potato Oats delivers everything you love about traditional oatmeal with a surprising twist. Sweet potato is such a versatile and well received ingredient when it comes to kids’ meals, it even works in a breakfast! Steamed, puréed and blended with oats and spices, they’ll love this new sweetly spiced and nutritious way to enjoy oatmeal.

Ingredients:

⅓ cup extra thick rolled oats (old fashioned oats)

1 cup water

1, 4 oz. pack sweet potatoes from Simple Starters Root Veggie & Squash Pack

1 tablespoon unsalted butter

1 cinnamon stick*

⅛ teaspoon ground cardamom

2 tablespoons organic maple syrup, (optional) 

*If you don’t have a cinnamon stick on hand, you can add ¼ teaspoon ground cinnamon to the cooked oats instead.

Instructions:
Fill a 2 quart pot with 1 cup of water, oats and cinnamon stick. Once the water boils, lower to a simmer and place a steamer basket inside the pot and fill with sweet potatoes from Simple Starters Root Veggie & Squash Pack. Cover the pot and steam for 10 minutes, or until the oats are cooked through. Once all of the water has been absorbed, remove and discard the cinnamon stick. Add the steamed sweet potatoes to the pot, along with the butter, ground cardamom and maple syrup (if using). Mash until smooth, using a potato masher. (If you are looking for smooth purée consistency for a younger baby use an immersion blender).  Allow to cool slightly before serving.
