Veggie Lunches: Sweet Potato Pesto Wrap

For families who prefer meatless meals, it can be challenging to find a quick and easy lunch option for your kids. That’s why we created maybe the quickest sweet potato pesto wrap perfect for a school or daycare lunch. Using Sweet Potatoes from our Root Veggies and Squash Pack, this 5-minute wrap is a colorful and fun twist on the lunch box sandwich featuring this sweet superfood!

Ingredients:

1 pack FoodieKid Root Veggies & Squash Pack

1 large “burrito” size (10 inch) Whole Grain Flour Tortilla

2 tablespoons pesto

Instructions:

Place the FoodieKid pack in the microwave and cook on high for 2-3 minutes, or steam according to package instructions. Cut open the pouch and let it cool slightly. Lay the tortilla down flat on a work surface. Spread the pesto evenly onto the tortilla, leaving a 1 inch border. Sprinkle the steamed/cooled sweet potatoes over the pesto. Roll the tortilla as tightly as possible. Slice off the ends of the roll. To make pinwheels, slice into 3/4 inch slices using a sharp chef’s knife.

Tip: If you want to ensure that the pinwheels stay rolled up, refrigerate the roll before slicing for about 2-3 hours.
