Lunchbox Solutions: Veggie Blend Mediterranean Pasta Salad

With the school year in full swing, you may feel like you’re making the same lunch on repeat for your school age or daycare-attending child. We certainly do! If you’re looking for some fresh lunch inspiration that doesn’t involve two slices of bread, check out FoodieKid’s take on a pasta salad using our Simple Starters Pea, Zucchini and Green Bean Veggie Blend. Ready in minutes, full of healthy veggies and a great alternative to that tired sandwich.


Ingredients:

1 cup uncooked tri-color or whole wheat Rotini pasta

1x 4 oz packet of Simple Starters Veggie Blends Pea, Zucchini and Green Beans

2 tablespoons olive oil

½ teaspoon lemon juice

⅛ teaspoon dried oregano

1 tablespoon feta cheese crumbles

⅛ teaspoon sea salt, optional


Instructions:

Prepare Simple Starters Pea, Zucchini and Green Beans from Veggie Blends pack according to package directions. Once cooked, pour into a large bowl and let the veggies cool slightly. In the meantime, cook the pasta according to the package instructions. Once fully cooked, strain the pasta and add to the bowl with the cooked/cooled veggies. Add the olive oil, lemon juice, dried oregano and feta cheese crumbles and toss to coat. Give a taste and see if you prefer a pinch of salt. Serve warm or refrigerate and serve it up for lunch as a pasta salad.
