Black Bean + Beet Burgers

Veggie burgers are a go-to favorite for our kiddos and an easy way to ensure your little one gets lots of veggies in a meal without having to make a side dish. If you’re looking for a change from frozen ready-made veggie patties, try our easy recipe for Black Bean + Beet Burgers. Simple, flavorful and satisfying, your little one will get all of the superfood benefits of beets along with a plant-based protein boost from black beans. These are great served on a traditional bun, or try them in a pita with greek yogurt. Yum!

Ingredients:

1x 4 oz. packet of Beets from Foodie Kid Simple Starters Root Veggie + Squash Pack

⅓ cup cooked black beans

3 tablespoons olive oil, divided

3 tablespoons whole spelt flour (or flour of choice)

¼ teaspoon fresh thyme leaves

⅛ teaspoon ground cumin

¼ teaspoon salt (optional)

Instructions

Prepare Simple Starters Beets according to packet directions. Allow the steamed beets to cool slightly. Combine the cooked beets with black beans, olive oil, salt (if using) spelt flour, and ground cumin. Blend until smooth (using food immersion blender or food processor). Shape into 2 equal sized patties. If mixture is difficult to work with, refrigerate for 30 min. Heat about 2 tablespoons of olive oil in a non-stick skillet over a medium-high flame. Cook patties for about 5 minutes on each side, or until the edges are crispy. (You can serve with greek yogurt on the side for dipping.)
